Age of Freedom – Sweet and Tender Dried Mushroom Soup

19th century was extremely curious time in the development of our decadent society. I bet all civil rights fighters will agree with me on that one: it is not Industrial revolution (who gives a heck now, we’re fighting for a clean environment, right?), or Napoleon fooling around Europe, or Opium wars when Brits got extremely smart on drugs, or Gold Rush in California and Australia I’m talking about – 19th century is the time when we got rid of slavery. And when I say “we” I don’t mean only “poor South”. I mean so much broader audience, you’ll be surprised. As many must already know, Civil War which rooted out the slavery ended in 1965. BUT, guess what happened in 1961 in Russian Empire (for those who don’t know such an entity – pre-soviet root of all evil)? If you’ll listen to your gut feeling, you’ll know – they cancelled serfdom, their kind of slavery, as well. Isn’t it conspicuous? But let’s look around a little more. Austria – 1848; Germany (Prussia, Bavaria and Saxony, can you believe Germany was divided not only in 20th century) – 1807, 1808 and 1839 respectively; Brazil – 1888. Am I the only one who does not believe that globalization is a new concept? Seems like someone doesn’t like all the truth to be voiced, meaning some conspiracy an anti-human processes are going on…
Why am I telling you all this? Simple, coz’ I care. So next time you walk into your corner grocery store to buy some mushrooms be careful, decide for yourself which corner looks most reliable: you surely remember that mushrooms absorb all nitrates and radionuclides and other non-useful compounds. And mushrooms you will need for today’s soup recipe. You know how many people find the smell of dried mushrooms disgusting, and they prefer not to touch dried mushrooms soup. But then imagine that you’re a great mushroom lover (I’d even say mushroom-dishes queen), and you have to throw an amazing party/dinner – mushroom soup has to be there, but still, you don’t want anyone to be disappointed. Don’t worry, perfect shot for that occasion is right here

Sweet and Tender Dried Mushroom Soup

You will need:
½ cup                    Dried mushrooms (preferably porcini)
1                           Medium carrot
1                           Large onion
½  lb                     Pasta
                             Salt
                             Butter (for frying)
                             Water

Method:

1. Put dried mushrooms into a bowl and cover them with a cup of warm water and cover the bowl. Let mushrooms stand there for at least 3 hours.

Tip: if you keep your mushrooms in water longer, it’s not going to hurt the dish, so you might want to soak mushrooms overnight before cooking.

2. Pour contents of the bowl into a medium pot. Add more water to fill the pot, approximately 8 cups.

3. Bring water with mushrooms to boil, then boil on a medium heat for 40 minutes.

4. Meanwhile peel carrot and onion. Grate carrot, chop onion into small pieces.

5. After 40 minutes remove mushrooms for the soup-to-be and leave aside to cool down. Let bouillon boil on
a small heat.

6. Melt butter on a pan.

7. Add onion to melted butter, fry them for 5 minutes until they get soft and translucent.

8. Add carrot to onions, fry them for 7 more minutes until carrots get soft.

9. Chop mushrooms into small pieces.

10. Add mushrooms to vegetable mix, sprinkle with salt, and fry for 5 more minutes.

11. Transfer fried vegetables into the pot with bouillon. Bring to boil and leave cooking for 10 minutes.

11a (optional). If you’re using big noodles like I do, break them into small pieces meanwhile.
Tip: you may use any pasta you like for this soup. I found for myself that noodles taste best, that’s why I slightly complicate the whole process.

12. Add pasta to soup. Boil soup for 15 more minutes.

13. Sweet and Tender Dried Mushroom Soup is ready to be served. Bon appétit.

There is one modern author who proves one extraordinary theory throughout his novels. He says that mushrooms aim to develop into mushroom clouds simply using mankind as a tool for reaching its’ goal. I know, sounds ridiculous. But then again – who knows? I’ll just say again – watch out and be careful, my darlings.
